6. Making chutney (Jonty).
Soak a lot of fruit in vinegar for a day (mango, peach, nectarine, pineapple, etc. Few apples for thickening. Add in some onion and chilli and even courgettes). Then put them in your biggest pot with lots of vinegar and lots of sugar (like 1:1:1) plus a little salt, and boil for hours, stirring to make sure it doesn't burn. It should turn brown and thick and sweet and tangy and delicious.
